Granola Bars

This recipe is adapted from the Sprouted Kitchen and Daily Garnish blogs. These are hearty and healthy and make a perfect purse snack.

1 cup old fashion oats
1 cup slivered almonds
1/2 cup pistachios
1 cup dried cranberries
1/2 cup dried apricots
2 tablespoons flax seeds
1/3 cup brown rice syrup
2 heaping tablespoons almond butter
pinch of salt

Preheat your oven to 300 degrees F. Toast the oats and almonds on an unlined baking sheet until they just begin to have color.

Grease a 9 by 13 inch baking dish with vegetable oil and line with parchment paper leaving flap on two of the ends.

Meanwhile, chop the pistachios, dried cranberries, apricots and flax seeds. Place in a large bowl and toss together with the oats and almonds. Add the salt, brown rice syrup and almond butter and mix together well. Use a spatula to evenly spread the mixture into the prepared baking dish. Bake at 300 degrees F for 20 minutes. Remove from the oven and let cool for 20 minutes, then remove the bars from the pan using the flaps of the parchment paper. Cool for 10 minutes, then cut into desired shapes, leaving the bars on the parchment to finish cooling and setting before transferring to another surface. Once completely cooled stack bars between pieces of parchment and store in an airtight container.
