Brownie, Salted Caramel and Vanilla Ice Cream. What more could you ask for on a hot and sunny 4th of July? A hot and sunny 4th of July, of course.
these brownies. Then make a full batch of this caramel and pour just about 3/4 of it over the brownies. (No instructions are needed for what to do with the remaining caramel.) Finally, top with a quart of good quality ice cream. Freeze until ready to serve and eat.
Oh, and for easy serving bake the brownies under a piece of parchment paper that has a tab hangover on two of the sides. Pull the completely cooled brownies out of the pan and place back in, before pouring over the slightly cooled caramel. Refrigerate the caramel until completely cool before spreading out an even layer of ice cream.
And one last thing, if you want to make this but are too intimidated (or lazy) to make the caramel and want to go out and buy a (good quality) jar, that is just fine by me. Not that you were asking for permission or anything, but it took me three tries to make the caramel for this. It kept crystalizing and I am not exactly sure why... but I have my theories, but I will spare you. But the brownies, oh, don't buy a brownie mix. This recipe is just as easy as using a brownie mix, I swear, and it is so much better. Oh, and for baking the brownies, bake until done la, (as Chef Yves would say) which was about 30 minutes, I think.
