A Celebratory Dinner

This post is a bit late but, better late than never. For Father's Day I made a few household favorites but with a slight twist. Individual portions of Grandma's Mac and cheese, but made with the addition of blue cheese. And a good addition it was. I also made a half batch of my classic brownie recipe but placed a layer of See's Dark Peppermint Patties (you could also use York Peppermint Patties) in the middle. Another brilliant addition. The brownies were even better than I thought they were going to be. To round off the meal we had Dad's favorite salad, a Caesar Salad, but made a with a much lighter dressing. (Something had to be on the lighter side.) This was the perfect Father's Day Dinner in my house and yet I imagine it would be a perfect celebratory dinner to many more.

You can find the Mac and Cheese recipe here. Just add the desired amount of blue cheese. I made a half recipe and added two ounces of Saint Agur Blue Cheese to the sauce and another two ounces (or so) of blue cheese crumbled on top of each portion.

You can find the brownie recipe here. Follow the instructions for the brownies but only pour in half of the batter. Place a single layer of peppermint candies on top of the batter (about 16 or so See's pieces but probably less York Patties). Then pour over the rest of the batter and bake as instructed.
