Here's a recipe for all of the butter babies.

Parmesan Chive Butter

Makes 1/2 cup

Here is a wonderful way to add an elegant and delicious touch to any meal by enhancing ordinary butter. The measurements here are not exact, and do not need to be. The key here is to use good quality butter and just a touch of flavoring- nothing too overwhelming. You can certainly try using other herbs and flavors, though I am partial to the delicate onion flavor of chives paired with nutty Parmesan. This butter is wonderful spread on bread and is perfect to dress up a variety of plain vegetables, baked potatoes, simple grains and so on.

1 stick butter (unsalted or salted), at room temperature
pinch of fresh ground pepper
2-3 tablespoons of fresh chopped chives
2-3 tablespoons freshly grated Parmesan cheese

In a medium size bowl, cream the butter well with a spoon until smooth. Mix in the butter, pepper, chives and Parmesan cheese. Add more of any ingredient, as desired.
